In 1980 he opened his first place, the Sea Basin Restaurant. Now known for a restaurant that proudly bears his name, Spiro embraces his success with humility while striving for culinary perfection. His trademark dishes include Spiro’s Famous Baked Clams, Grilled Shrimp and Eggplant, and Sauteed Shrimp Athenian, which has a touch of anisette along with the fresh tomato and feta cheese.
