Who doesn’t like food? Every variation of food has its ethnic origins and we love it for its differences. Therefore, it’s fair to say there’s probably something for everyone. I’m not a fussy eater, but I’m not experimental. I like certain foods, one French dish, two or three Chinese dishes and maybe white pizza. I don’t have a sophisticated palette and I don’t apologize for it. I grew up loving White Castle hamburgers, which were served to your car, and maybe once-in-a-while, ate chicken chow mein. I thought that was gourmet dining. How would I know? I grew up on Staten Island and it was kind of different in those days. My mom’s cooking was Jewish/Russian and I didn’t have a chance. No local restaurants and my food choices were limited. I recently saw a movie called “The Deli Man.” From the title, you can tell it was about food and only the kind I knew from early on. I should have worn a bib while watching the film, because I couldn’t stop salivating from all the delicious food that was being passed around. Actually, what I know about food is what I hear. I’m not a cook and just don’t have the inspiration to become one. I understand each ethnic recipe has its “magical” ingredient, which makes it outstanding, However, after watching this film, I rediscovered one of the “magical” ingredients of Jewish food: rendered chicken fat or “schmaltz.” Right up front, displayed on a counter, was a pitcher of “schmaltz.” I’m almost certain that amount could easily contribute to three cardiac bypasses, one stent, two heart attacks and maybe ten gall bladder attacks. I think I’ve had a few of some and a patient-in-waiting for the others. As a matter of fact, I saw the same type of fat in the picture of my gall bladder after its removal. Would that appeal to a cannibal? “Schmaltz” is far from pleasant to see, but unfortunately, delicious to taste. I grew up eating this stuff and now watching how some of my favorite foods were prepared, it not only raised my blood pressure but probably my cholesterol as well. Every showing of this film should come with a cardiologist on hand! I think “schmaltz” not only flavors your food well, it also can be used in a pinch for multiple purposes. A character in the film suggested it could be used in place of WD-40 or even something more intimate. I wouldn’t go that far. Would those suggestions have universal appeal? Listen, instead of corn oil or suet as alternative fuels, how about chicken fat? The smell would be good for the economy, because it would make people hungry and they would buy more food. Eau de Schmaltz could turn any hungry person on. For travelers, if by mistake you spilled some on your automobile engine while using it instead of oil, you could always throw a steak in there and cook while you’re driving.
